Chocolate Chip Cookies

Ingredients
  • 2 1/4 cup flour
  • pinch of baking soda
  • pinch of salt
  • 1 cup (2 sticks) non-hydrogenated vegan margarine or vegetable shortening
  • 1 1/2 cup packed light vegan brown sugar
  • 3 tablespoon vanilla extract
  • 1 tablespoon imitation butter flavor
  • 1 1/2 tablespoon Ener-G mixed with 2 tablespoon tepid water
  • 1 1/2 packages (12 oz. each) semisweet chocolate chips*
  • 1/2 cup chopped walnuts or pecans
Instructions
  1. Combine flour, salt, and soda in small bowl; set aside. In a large mixing bowl, cream margarine, vegan sugar, flavorings, and egg substitute in order listed, mixing well. Add flour mixture and combine thoroughly. Add chips and nuts; mix well. Drop by teaspoon onto ungreased non-stick baking sheet and bake in preheated 375 degree oven for about 6 minutes. Cool on wire rack. Makes about 100 dainty cookies.
