Peanut Butter Breakfast Cookie

Ingredients
  • 1/2 cup vegan margarine
  • 1 cup smooth or chunky peanut butter
  • 1 cup vegan brown sugar
  • 1 banana
  • 1 cup whole wheat flour
  • 1/4 cup soymilk
  • 1 cup bran
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a cookie sheet with cooking spray.
  3. Blend vegan margarine, peanut butter, vegan sugar and mashed banana. Add the rest of the ingredients and mix well. Roll into balls, place on sheet, and flatten with your fingers or a fork
  4. Bake at 350 degrees for 8 to 10 minutes. Makes a perfect breakfast…….!
